A Guide to Cooking Chicken on the BBQ
Chicken on the Barbecue is quick and simple to cook if you follow a few simple guidelines.
- Allow the Barbecue to reach a medium heat (or set it so if using gas), the correct temperature will ensure that the skin is crisp and the fat melted without the chicken getting burnt.
- Ensure the lid is down so that you get a good even heat.
- Use aluminium foil to catch the drips of fat (prevents 'flare ups')
- Prick the skin before grilling to prevent the skin from forming bubbles..
- Start grilling 'bone side' down to ensure the chicken doens't burn.
- If applying a glaze or sauce, apply it half way through the cooking process and turn often to prevent the chicken from burning.
- Marinate the chicken in the fridge (room temperature is dangerous and can lead to food poisoning).
- To avoid cross contamination,always use separate plates and utensils for raw and cooked chicken.
- If using frozen chicken, defrost chicken in the refrigerator (covered) or in the microwave on the 'defrost' setting.
