Ingredients : Zesty Breakfast Burritos Recipe
4 eggs
6 egg whites
1/4 tsp salt
1/4 tsp chili powder
1/2 tsp black pepper
4 oz chopped green chili peppers, drained
1/2 cup roasted red peppers, chopped
1 tbsp olive oil
8 small flour tortillas
1/2 cup reduced fat cheddar cheese
In medium bowl, beat together eggs, egg whites, salt, chili powder and
black pepper. Stir in green chili and red peppers. In large skillet over
medium low heat, add oil and heat for 30 seconds. Pour in egg mixture and
cook, stirring until soft-set, 8 - 10 minutes. Preheat oven to 350 oF.
Wrap tortillas in foil and place in oven for 10 minutes. Remove tortillas
and spoon equally divided egg filling over them; sprinkle with cheese.
Fold up each tortilla envelope style. Serving (2 burritos) provides: 2 b,
1 1/2 p/m, 1 fat, 5 g fat, 2 g fiber.
