Miller's Calzone Recipe

Ingredients : Miller's Calzone Recipe
PASTRY
3 cup all-purpose flour
1 cup whole wheat flour
1 1/4 tsp salt
1/3 cup margarine
1/3 cup shortening
1 buttermilk, as needed
FILLING
1 1/2 cup ricotta cheese
1/4 cup parmesan cheese
1 salt & pepper to taste
1/4 tsp thyme
1 each egg, beaten
1 cup ham, diced
PASTRY: In mixing bowl, measure flour and salt together. Quarter
margarine and shortening into cubes and add to bowl. Work the dough
by hand, adding buttermilk a tablespoon at a time until kneaded to a
pliable dough consistency. Cover and refrigerate.
FILLING: In mixing bowl, combine all ingredients. Take dough and
divide it into 6 equal balls. On floured surface, roll out dough to
1/4" thickness. Place 1/6 of the filling mixture on dough and fold
dough in half, forming a half-moon shape. Pinch edges together and
prick dough with a fork. Repeat until all are filled. Placed on
greased baking sheet and bake in a 350-degree oven approximately 20
minutes.
