Ingredients : Apricot Chutney-1st Place Recipe
1 cup white sugar
1 cup brown sugar
1 cup cider vinegar
1 tbsp finely chopped ginger or 3/4 tsp., ground
1 ginger
1 tsp dry mustard
1 dash dried cloves
1 small lime, chopped
3 small dried hot chili peppers, crushed
1/2 cup chopped onion
1 small garlic, mashed
1 cup raisins
4 lb apricots, pitted and
1 quartered
1 tsp ground allspice
Combine all ingredients except apricots in large pot; bring to a boil, then
add apricots. Return to boil. Simmer 45 minutes or until slightly
thickened stirring frequently to prevent sticking. Put up in hot
sterilized
jars and process 10 minutes in boiling water bath. Yields 4 pints.
