Ingredients : Festive Wild Rice Salad Recipe 1 Recipe
3 1/2 cups cooked wild rice
1 jar marinated artichokes vegetable oil
1 green bell pepper, chopped
1 onion, chopped
2 tomatoes, chopped
1 can whole kernel corn, drained
1 cup frozen peas
1/4 cup fresh parsley, chopped
japanese seasoned rice vinegar
salt and pepper
Drain artichokes, reserving liquid; chop and set aside. Using reserved
liquid, add vegetable oil to equal 1/4 cup; stir into wild rice. Add
vegetables and toss. Add approximatel 1/4 cup Japanese Seasoned Rice
Vinegar, just enough to season wild rice salad. Salt and pepper to taste,
Marinate 6 to 8 hours, or overnight.
