Turkey Skillet Ratatouille Recipe









Ingredients : Turkey Skillet Ratatouille Recipe

1 each Eggplant, small/pared
1 each Zucchini, small, diced
1 each Onion, halved/thinly sliced
1 each Garlic clove, minced
2 cup Tomatoes, broken/w juice
1 each Salt & pepper to taste
1 1/2 tsp Oregano
3 cup Turkey, roasted/cubed



Instructions : Turkey Skillet Ratatouille Recipe

Spray skillet with cooking spray. Combine all ingredients except
turkey. Cover and simmer 10 minutes, stirring frequently, until
vegetables are tender-crisp. Stir in cubed turkey, Cook and stir
uncovered until nearly all the liquid is evaporated and the turkey
cubes are white (about 3 to 4 minutes). Calories 120 per serving.
