Ingredients : Creamy Cole Slaw Recipe
2/3 cup plain, nonfat yogurt
1/4 cup rice vinegar, up to 1/3
1/3 cup evaporated skim milk
1 tbsp sugar plus
1 1/2 tsp sugar
1/2 tsp celery seed
1/2 tsp freshly ground black pepper
1/2 tsp salt
1 small head green cabbage
cored and finely grated
(about 6 cups)
MAKES 6 SERVINGS. LACTO
Too often cole slaw depends on cream, mayonnaise or sour cream for flavor.
This dressing relies on nonfat yogurt, evaporated skim milk and mild rice
vinegar. It is enough to amply dress 6 cups of finely shredded cabbage.
In large bowl, whisk together all ingredients except cabbage until sugar
and salt are completely dissolved. Toss with cabbage in nonmetal bowl.
Refrigerate. Toss again before serving. Makes 6 servings.
