STRING OR SKEWERS. PLACE BREAST SIDE UP ON RACK IN SHALLOW ROASTING
PAN. BRUSH WITH MELTED BUTTER. ROAST UNCOVERED FOR ABOUT 1 HOUR AND
15 MINUTES. BASTE FREQUENTLY WITH BUTTER. TO BROWN THE HEN, RAISE THE
TEMPERATURE TO 4000F. FOR THE LAST
10 MINUTES.
