Bourbon Mashed Sweet Potatoes (2.5 Pts) Recipe









Ingredients : Bourbon Mashed Sweet Potatoes (2.5 Pts) Recipe

2 1/2 lb peeled sweet potatoes, cut into large chunk
1 lb carrot, peeled, cut into chunks
2 shallots, peeled, halved
2 tbsp unsalted butter
1/3 cup packed dark brown sugar
3 tbsp bourbon or apple juice
1 tsp salt
1/4 tsp ground cinnamon
1/8 tsp allspice



Instructions : Bourbon Mashed Sweet Potatoes (2.5 Pts) Recipe

Preheat oven to 425F. In large foil roasting bag, place sweet potatoes,
carrots and shallots in even layer; seal bag. Place on baking sheet. Bake
1 hour, until tender when pierced with metal skewer.

Meanwhile, in small saucepan, combine remaining ingredients. Bring to a
simmer; cook 3 minutes.

In food processor, combine potato mixture and sugar mixture; process, in 2
batches if necessary, until smooth. Scrape into serving dish. Serve
immediately.

Makes 10 servings. Per serving: 131 calories, 2 g protein, 25 g carb, 3 g
fat, 4 g fiber, 6 mg cholesterol, 268 mg sodium
